All Starfield achievements can be completed in the game's easiest mode. All achievements outside the main story can be missed if you complete the story without first making a manual save. Completing the story will automatically start a new game+, which will delete all your progressions and require you to redo all faction quests and retrieve other collectibles.
The "Starcrossed" achievement can also be missed if you don't keep a relationship. You'll need to do all the positive responses with one of the 4 characters (Sarah Morgan, Sam Coe, Andreja, Barrett). Feel free to save before talking to any of the four characters who may be your friend, so you can come back if you don't answer correctly. Building a relationship can take over 30 hours.
Completing the Starfield story will take you around 30 hours. Add another 20 hours to complete all the faction quests. During your various quests, try to find all the magazines, and achieve all the other trophies.
After completing all the trophies, you should be close to level 40. You'll then need to spend a few hours leveling up to reach level 100.
